Summer has officially started! Here at Lazyjack Press, we are definitely trying to savor every last moment. We're loving the rooftop happy hours, concerts in the park, and drinking a cold one (or ten) on the beach.
I am a huge fan of the Skinny Taste blog (you should check it out) and saw a recipe for frozen mojito popsicles. Unfortunately, her recipe didn't include rum since she was making them for her toddler. I adapted the recipe so we can add something different, light, and refreshing to the cocktail repertoire so that we really can enjoy all the summer has to offer! Bonus: This recipe serves 8!

Here's What You'll Need:
1 1/4 cups of orange juice (really try to do fresh squeezed if at all possible)
8 teaspoons of your favorite sweetener although I think 2 Splenda packets is sufficient
3 tbsp lime juice
3 tbsp lemon juice
3/4 cup of water
10 fresh mint leaves
8 fresh basil leaves
8 shots of rum of your choice
Ice
Optional: adding strawberries of pineapple or another favorite fruit
What To Do:
Add all ingredients to a blender and blend until smooth.
Pour about 1/3 of a cup of the mixture into a popsicle mold if you have it. Otherwise, pour the mixture into small dixie cups and place in the freezer. After about an hour, add a popsicle stick to the almost solidified mixture.
About a year ago, I saw a segment about Zach Sobiech, a young man with terminal cancer. I was absolutely blown away by his story. His courage, poise, and determination was so inspiring! I know we all find ourselves at times taking life for granted and letting the little things get us down. I recently re-watched his story and renewed a promise to myself to live life to the fullest and not take anything/anyone for granted.
His story is about 20 minutes long, but I promise, it's the best 20 minutes you'll spend today.

We recently had one of the most refreshing and stunningly simple summer cocktails at the Grey Lady in NYC. It's too good not to share. Perfect for a cocktail after work or a make-ahead for a summer bbq/party. And we're glad Cisco Brewery's Triple Eight Blueberry Vodka is now on our radar. Here's our take on the Grey Lady's cocktail.

What You'll Need: (serves 1)
-2 oz 888 Blueberry Vodka
-1 lemon
-Simple syrup or half of a Splenda packet (optional)
-Seltzer water
What To Do:
-Pour the vodka into a tumbler filled with ice.
-Next, use a lemon juicer and add the juice from the whole lemon.
-Sweeten to taste.
-Add a splash of seltzer water
-Shake it up and garnish with a lemon wedge. I also like to add a toothpick filled with cold green grapes for color!
Memorial Day marked the unofficial start of summer and we hope that everyone had a great three-day weekend! We couldn't be more excited about all of the fun that lies ahead this season!
